The kids and I are heading back to Fort Collins this weekend and will be there for 11 nights! That is 11 nights that Tyler will be in charge of dinner by himself! Of course he is a big boy and 100% capable of taking care of himself, but let’s be realistic. This means Sunday-pizza, Monday-Taco Bell, Tuesday-Pizza, Wednesday-maybe hot dogs, Thursday-Pizza, and so on and so on! Oh yeah, and breakfast EVERY one of those day-Leftover pizza! My husband LOVES LOVES pizza and would eat it every day if that was ok!
So….my plan this week is to prepare some easy meals for him that he can add into the mix while we are gone. Fingers crossed! I know full well that I may come home in a few weeks to everything still in the freezer!
We are going to do burritos for dinner tonight, and it is so easy to just double the recipe. I will individually wrap 10 or so for him and freeze them and he can grab them and heat them in the microwave whenever he’s hungry. Great to take to work for lunches too! His are super easy: tortilla, refried beans, taco meat, cheese, green chili (which we buy every time we are in Fort Collins and bring home with us because South Dakota is CRAZY and doesn’t sell it anywhere here!). Boom, wrap it, freeze it, and this will cover a few dinners and lunches for him.
During the school year we make a big batch of breakfast burritos once a month and freeze them. The girls warm them up before school when we are running behind and don’t have time! They love them! Tortilla, eggs with Rotel, bacon or sausage, cheese, green chili! Adding another kiddo to the morning school routine this year may mean this happens more often 😦 Especially the first week or so, as I cry through the mornings wondering how my little man is starting kindergarten already!!
I’m also going to make a batch of shrimp with a cajun seasoning and veggies wrapped in foil. These are as quick and easy as it comes! Plus, my husband loves seafood and we don’t eat a ton around here because the kiddos and I don’t care for shrimp. To prep, I cut up a few pieces of Andouille sausage (or any type of sausage that you enjoy), slice up a zucchini, red pepper, onion and some mushrooms. Lay out about 4 large pieces of aluminum foil. Then, I mix together cajun seasoning and salt and pepper in a bowl and toss the shrimp to coat them. Divide the veggies, sausage and shrimp between the foil pieces (can season with some parsley and basil) Finally, I add about a tablespoon of Pinot Grigio or any dry white wine, and 1/2 tablespoon of olive oil. Wrap them up and place in individual freezer bags.
When he’s ready to eat them, he just preheats the oven to 425 and pops them in for about 45 minutes!
I’m thinking I will also make a batch of chili and separate into two containers, he can do chili one night and chili dogs one day. Super easy.
